Method

  1. Wash lettuce leaves, dry thoroughly and chill while making the filling.

  2. Heat a wide pan until hot, add oil and mushrooms, and let them brown before stirring.

  3. Add capsicum, garlic and ginger; stir-fry for 2 minutes. Add soy and cook until the pan is nearly dry.

  4. Finish with lime and spring onion. Spoon warm filling into cold lettuce cups and eat immediately.
