Toss sliced karela with 1/2 teaspoon salt and rest for 20 minutes. Squeeze out the released liquid and rinse once if desired.

Heat mustard oil, add fennel, then spread in karela. Cook uncovered over medium heat for 10 minutes.

Add onions, turmeric, coriander powder and chilli. Continue cooking, stirring occasionally, until both are browned and tender.
