Method

  1. Whisk curd, milk, chia and cardamom. Rest 10 minutes, stir again to break clumps, then cover.

  2. Refrigerate for at least 4 hours until softly set.

  3. Purée one mango and dice the other. Taste the fruit before deciding whether optional honey is needed.

  4. Layer chia curd, mango purée and diced mango in glasses; finish with nuts or seeds.
