Fresh Fig Date Oat Bites

Most energy-bite recipes rely only on dried fruit; fresh figs give these a softer, lighter texture. Because fresh fruit adds moisture, the batch is cooked briefly and stored chilled.

Make it

Method

  1. Cook chopped figs and dates in a dry non-stick pan over medium-low heat until jammy and most free moisture has evaporated.

  2. Stir in toasted oats, ground seeds, cardamom and salt; cook for another minute.

  3. Cool until safe to handle, then roll into 12 small balls with damp hands.

  4. Chill for one hour to firm before serving.

Kitchen notes

  • Remove every date pit before chopping.
  • Refrigerate in a covered box and finish within three days because the recipe uses fresh figs.
