Cool the boiled arbi completely, peel and press each piece lightly to flatten without breaking it apart.

Toss with oil, turmeric, cumin, coriander, ajwain, salt and chilli.

Air-fry at 195°C for 15–20 minutes, turning once, until crisp and browned.

Sprinkle with amchur and serve hot.
Kitchen notes
Do not overboil arbi or it will become difficult to handle.
Wear gloves if raw colocasia irritates your skin, and always cook it fully.
